Cinco Sentidos - La Colección Mixteca Edición 3 - Cucharilla y Papalome 46.7% ABV

This post distillation blend of Cucharilla & Papalome (a. Potatorum) is representative of one of the first few attempts that maestro mezcalero Delfino Tabón Mejía has harvested, roasted, fermented Cucharilla and Papalome together. He harvested nearly 150 of the Cucharillas from the gray limestone soil of his wife's hometown, which sits at 6,500 feet above sea level, trucked them back to his hometown of San Pablo Ameyaltepec, and then roasted them in an underground oven alongside a few dozen Papalome from the same region. After the roast, he broke them down with a mechanical mill, creating a fermentable mash that he eventually allowed to ferment with a spring water for nearly a week. Once fermentation was deemed to be complete, Delfino distilled the mash once with his two copper, three-plated reflux stills, creating 231 total liters. Distilled in October 2022, bottled January 2023 

"La Collecion Mixteca" is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcalero's interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from this collection will be used for palenque improvment projects.

• A damaged package request and picture evidence of damaged items must be made within 24 hours of receiving your ‘shipment delivered’ email notification.  Note that damaged products must be returned to us in order to receive a refund.
