Cinco Sentidos - La Colección Mixteca Edición 3 - Espadin con Pichomel 47.31% ABV
This batch of Espadilla (a. Rhodcantha) and Pichomel (a. Marmorata) is a unique blend of two agave varieties that were harvested from different states, yet were roasted, co-fermented and co-distilled together. Maestro Mezcalero Atelo Ramirez, along with his wife Laura Arriaga, purchased the espadilla from Laura's home state of Morelos. Before roasting, Atelo harvested about a dozen wild pichomel from the hills of Los Reyes Metzontla, Puebla, and he and Laura roasted the espadilla along with the pichomel in an underground oven with mesquite and pirúl firewoodfor five days. Once the roasting was complete, Atelo hand-mashed the cooked agaves with a wooden mallet. He then dry-fermented the agave for four days before adding spring water and allowing the fermentation process to continue for another 12 days. He and Laura eventually double distilled the fermented mash in their homemade still crafted from galvanized steel, a clay cazuela, and copper condensing coils. Distilled in April 2022, bottled September 2022.
"La Collecion Mixteca" is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcalero's interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from this collection will be used for palenque improvment projects.
