In October 2022, legendary maestro mezcalero Atenogenes Garcia created this 50-50 Ensamble of Espadin (a. Angustifolia) & Madrecuixe (a. Karwinskii) in his hometown of San Isidro Guishe, where he has been making agave spirits since the early 1990's. To make this batch, Atenogenes roasted equal parts cultivated Espadin and Madrecuixe in an underground conical oven with mesquite, huamuche, and guajal firewood for 8 days. Once they were roasted, he used a two-ton tahona, pulled by a tractor, to crush the cooked agaves and create fermentable mash. That mash was then heaped into a single sabino cypress vat and left to ferment with well water for 23 days. Once the fermentation was deemed to be complete, Atenogenes double-distilled this batch to proof, blending with heads and hearts and opting to leave the batch at this ABV, 54.9%. Bottled June 2023. Half of this batch was bottled for our friends at Madre! Restaurant in Los Angeles.
