This batch of mezcal Cuish (Agave Karwinskii) was produced from 8 year old mature wild agave in the Sierra Sur region of Oaxaca. It was tradtionally crafted in the village of San Guillermo, Miahuatlán by maestro Mezcalero Francisco Garcia Léon. the successor in a long line of mezcal producers.
The agave was baked in a conical earthen oven for 6 days and ground by a horse-drawn stone tahona mill. The fermentation took place completely naturally with wild yeasts abd well water in cypress vats over the course of 7 days at which time the mezcal was distilled twice in a copper pot-still and adjusted with twice distilled well water to 48% ABV.
The fresh herbal and mineral aromas and flavors you will find in this mezcal come only from the agave. water and earth of the Sierra Sur of Oaxaca and this traditional methods passed down for hundreds of years to the producer. Francisco Garcia Leon.
